Basic All-American Pie Dough



Whether it's deep-dish berry or rhubarb cherry, a good pie never goes out of season. For a truly delicious treat, top your summer off with a fruit-filled favorite. We found four refreshing pie recipes (plus handy instructions for the ultimate pie crust!) that will warm your kitchen ‑- and your heart.



Basic All-American Pie Dough

Crisp and flaky, this dough is suitable for any pie. Your hands are the best tools for making it, so I urge you to plunge them right into the flour and shortening, and forge ahead. You'll become familiar with the feel of the dough right away, and you'll be surprised how quick and easy it is. When friends taste your pies, they will want you to show them how you did it.

Overblending the fat and flour and adding too little water can make a crust hard rather than flaky, and mixing by hand gives you the best control. That's why I don't like to make pie dough in a food processor or mixer.
