If you've ever kept a food diary for a fitness trainer or nutritionist you know the horrible indignity of having a near stranger pick apart the goings on of your meal plan. Can you imagine if someone checked out our children's food diary? I can hear it now, "Great breakfast idea for little Scarlett, but why did she have a chocolate croissant and craft glue at 11 for a snack?"
It's such a mountain parents have to climb to come up with healthy meals AND snacks every flipping day. Some times the snacks are even harder than the meals. Outside of fruit, most of the really convenient stuff is crammed with sugar and has no nutritional value whatsoever. It's why it's best to choose items that count towards a kids daily nutritional quotient (think fruits, whole grains, dairy, vegetables). It's what those nutritionists would recommend after they finished stripping me of my pride.
These five superfood snacks are loaded with good stuff and easy enough to make it doable, but absolutely kid-friendly in delivery, whether it's a dip or a palm-sized muffin.
Wholegrain Blueberry Muffins
Makes one dozen full size muffins or 18 minis
1 1/4 cup wholewheat flour
1 1/4 cup quick oats
1/4 cup flax meal
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1 cup applesauce
1/2 cup buttermilk
1/2 cup brown sugar
2 Tbsp. vegetable oil
3/4 cup blueberries
1. Preheat the oven to 375 degrees.
2. Lightly butter muffin tins.
3. In a large bowl blend all of the dry ingredients – except the sugar – together well.
4. In another bowl whip the wet ingredients and the sugar with an electric mixer.
5. Gently shake the dry ingredients into the wet, giving it a quick blend every few shakes. Stir in the blueberries.
6. Pour batter evenly into your muffin tins and pop into a hot oven. Bake for 20 minutes until they’re firm and toothpick comes out clean.
