|1/4 cup coconut milk||1 tablespoon peanuts, crushed|
|1 teaspoon curry powder||1 tablespoon prepared chutney (optional)|
|1 cup Asian-style frozen vegetables, thawed|
Prepare rice according to package directions.
In a small microwave-safe bowl combine coconut milk and curry powder. Add vegetables and chicken. Microwave on HIGH 2 minutes.
Fold in rice.
