I can almost smell it. According to the calendar, summer's true start-date doesn't arrive until June 20, but who cares? Schools are out and the weather's hot—at least here in Northern California—so let's jump the gun and start the season a little early.
As with all good things, the arrival of summer definitely calls for a toast.
But not that kind. Save the champagne for weddings and swanky parties, and grab the sandwich loaf instead, because toast—that humble staple—serves as the perfect base for many of the sunshiny season's quickest snacks, meals, and appetizers. Here are a few ideas for how to elevate a piece of crisp bread into something satisfying, and indisputably summery:
1. Grab a potato masher. Squish assorted berries, stir in a little agave nectar, and slip on buttered toast.
2.Whirl your favorite herbs, olive oil, garlic, cheese, and nuts in the food processor for an instant pesto. Spread thickly on toast with grilled eggplant or, even easier, slices of roasted red pepper.
3.Toast thick slices of brioche. Stir together soft butter and honey. Slather on toast and top with ripe apricot slices.
4.Find some wee cherry tomatoes. Toss them in a hot skillet with a little olive oil until they burst. Pile on toasted baguette with a little oil-packed tuna. 5.Nutella, sliced peaches, toast. Got that?
6.Tear up lightly toasted pita. Hit with chunks of cucumber, briny olives, yellow tomatoes, and a bright, citrusy vinaigrette. Toss in some rare beef chunks (leftovers work great) for a colorful, filling bread salad.
Now go out there. Get toasted.
