Chopped Watermelon Salad


Give your skin a natural, healthy glow with this dish devised by Pamela Bond, certified health coach, aesthetician and creator of Pamela Bond Skin Fitness. “This salad improves the appearance of your skin while giving your body loads of nutrition.”

The cucumbers are high in silica which helps maintain collagen in skin and the coconut can rejuvenate age-related damages tissue. Plus, “The essential fatty acids in the hemp are great for helping maintain healthy skin, too,” says Bond.

Ingredients:
1 bunch of spinach
1 tbsp hemp seeds
1 small cucumber, diced
1 sliced watermelon, diced
1/4 cup of coconut meat
3 limes, skinned and pitted
1/4 cup coconut water
1 tbsp coconut oil
1/2 tsp salt
¼ cup cilantro
1 cup basil, packed
4 Tbsp. raw honey or agave (you can substitute stevia for a low-sugar variation)
½ cup olive oil

Directions:
Put all ingredients except the oil in a blender or food processor and blend on high until well combined. With the motor running, add oil in a thin stream, until the mixture is rich and emulsified.

Toss with pre-mixed salad ingredients.
