Brussels Sprouts

These little globes of goodness come from the phytonutrient-rich cruciferous family of vegetables, which studies have shown to protect against cancer. Brussels sprouts are also a source of vitamins A and C, fiber and folate. Choose tight, compact sprouts that are blemish-free and bright green in color and store unwashed in a sealed bag in the refrigerator. Before roasting, steaming or sauteing, slice the sprouts in half to cut down on their bitterness.
