Ingredients: 1/2 tbsp lime juice 1 tsp dark sesame oil 1 pinch red pepper flakes 3 cups fresh broccoli florets 1/2 cup chopped red bell pepper 1/4 cup sliced green onions 1 clove garlic, minced or pressed ¼ cup low-sodium soy sauce 2 tsp wasabi powder 2 tbsp chopped peanuts (optional)
Directions: Combine soy sauce, wasabi powder, lime juice, sesame oil and red pepper flakes. Set aside.
Bring a pot of water to a boil to blanch the broccoli, about 2 to 3 minutes. Strain broccoli and let cool to room temperature. Mix in red pepper, green onions, garlic and soy sauce mixture and let sit for at least 30 minutes. Top with peanuts before serving.
