This easy dish is the perfect combination of heart healthy mono- and poly-unsaturated fats and fiber, which help to lower cholesterol, reduce risk of heart disease and help you stay fuller longer, says Allison Stowell, a registered dietician RD in Bedford Hills, NY. Furthermore, “Nutrient-rich almonds and spinach provide essential calcium for bone health, while antioxidant-rich strawberries pack in anti-aging vitamin C for defense against free radicals.”
Ingredients: 3 tbsps brut champagne, champagne vinegar, or white wine vinegar 1 tbsp sugar-free strawberry spreadable fruit 1 tsp canola oil 5 cups baby spinach, rinsed and patted dry 2 cups halved fresh strawberries, hulled 1/4 cup sliced unsalted, dry-roasted almonds
Directions: In a small jar with a tight-fitting lid, combine champagne, strawberry spreadable fruit and oil. Cover and shake until ingredients are well combined. Place in the refrigerator until serving time.
Tear spinach into bite-size pieces. Place in a large salad bowl and add strawberries. Shake dressing, pour over spinach mixture, and toss to coat. Sprinkle with almonds.
