As a mother of three and the head of a health lifestyle program at her local elementary school, Amy Roskelly shares family-friendly recipes on her blog Super Healthy Kids. Her Almond Maple Popcorn Snack recipe was inspired by a nut butter- and maple syrup-topped pancake breakfast. Roskelly figured that if the combo was great on pancakes it would be even better on high fiber, low calorie popcorn.

| 1/3 cup popcorn kernels | 3 tablespoons almond butter | |
| 2 tablespoons butter | Chopped almond pieces, optional | |
| 1 tablespoon maple syrup |
Pop the popcorn on the stove top or in the microwave.
Melt the remaining ingredients together.
Pour the sauce over the popcorn and top with almond pieces. The sauce never really sets up. It's kind of a gooey, messy thing to eat, but still delicious!
