Carbs count, but so do calories. A large corn muffin yields 500 calories, but an English muffin delivers about half that, even with the toppings. “And the corn muffin contains 85 grams of carbohydrates, an excessive amount for a diabetes patient at one meal,” says O’Connor, who tells her female patients to aim for 45 grams per meal and her male patients between 45 and 60. To have your corn muffin and eat it too, bake your own in muffin pans so you can make them about half the size of store-bought varieties.
