The oatmeal in the topping makes me feel like it's OK to eat it for breakfast!
|1 cup rolled oats||5 - 6 Granny Smith apples, peeled, cored and roughly chopped|
|1/2 cup brown sugar||1/4 cup granulated sugar|
|8 tablespoon cold unsalted butter, cut into pieces||1/2 teaspoon cinnamon|
|Pinch of salt||1 tablespoon lemon juice|
Preheat oven to 350 degrees F. Grease a deep-dish pie pan or 8x8 baking dish with butter
Toss your apples with the granulated sugar, cinnamon and lemon juice and spread in the bottom of your prepared pan
Using a food processor, grind the oats slightly. Add the brown sugar, about 6 tablespoons of the butter and salt and pulse to combine. Don't overgrind this mixture- you want to leave visible chunks of butter. Spread this mixture over the apples, then dot with remaining butter.
Bake the crisp 25-30 minutes, or until the apples are tender and then the topping is golden.
