|1 1/2 cups oat bran||1/4 cup skim milk|
|1/2 cup whole-wheat flour||1 egg|
|3 tablespoons brown sugar||2 tablespoons sunflower oil|
|2 teaspoons baking powder||2 tablespoons honey|
|1 teaspoon cinnamon||1 cup cooking apples, peeled and diced|
|1/2 teaspoon Salt||2 tablespoons raisins|
Preheat oven to 400 degrees F.
Grease a 12-cup muffin tin with margarine.
Combine oat bran, flour, brown sugar, baking powder, salt, and cinnamon; set aside.
In a large mixing bowl, combine apple juice, skim milk, egg, sunflower oil, and honey.
Add flour mixture, apples, and raisins and combine until just moistened.
Fill muffin tin and bake for about 20 minutes or until golden brown and a cake tester comes out clean.
