Sweet apricot combined with the woodsy flavor of chopped pecans gives this chicken a rich flavor.
| 2 chicken breasts, cut-up | 1 tablespoon soy sauce | |
| 1/2 cup apricot preserves | 1 tablespoon ginger | |
| 2 tablespoons cider vinegar | 1/2 cup chopped pecans | |
| 1 clove garlic, minced |
Preheat oven to 350 degrees F
Mix together all sauce ingredients, set aside
Place chicken breasts on a roasting pan
Baste with apricot mixture and bake for about 30 minutes or until cooked through
Keep basting every 10 minutes
Last 5 minutes of cooking, turn the oven to bro
Lightly brown the chicken just before serving.
