From Arugula to Ziti: French Toast

I wasn't always a big breakfast person. Most mornings I'm content with just coffee. But as every woman that has ever tried to lose weight knows, breakfast is a crucial meal. It jumpstarts your metabolism for the day and gets everything moving so that your body is ready to run. (And you can't lose weight without your body running.) So I try and make myself sit down in the morning and eat something, usually a bowl of cereal on weekdays and an egg on weekends.

I know there’s a disconnect between a post about French toast and a first paragraph about how eating breakfast is crucial to losing weight. This post isn't about being thin. It's about a decadent breakfast that is reserved, at least in our house, for special occasions. Eggy, spiced, crispy, creamy French toast—my absolute favorite breakfast.

French toast is easy to make, and when you use great bread, it's hands down delicious. It's the kind of breakfast you serve to your partner in bed on their birthday, or a meal you whip together when the sister you're always trying to one up is in town visiting. It’s guaranteed to knock your socks off and make breakfast your favorite meal of the day.

French Toast
Serves 2

4 pieces of bread, sliced thickly
2 eggs
½ cup whole milk
1 tablespoon cinnamon
1 teaspoon ginger
1 teaspoon nutmeg
1 teaspoon vanilla extract
2 tablespoon butter
½ cup raspberries
Maple syrup
Powdered sugar

In a bowl, whisk together eggs, milk, extract, and spices.

Place a pan over medium heat and melt the butter. Dip the bread into the egg mix, coating generously, and place in hot pan. Cook 2-4 minutes each side or until a nice golden brown.

Sprinkle with powdered sugar, drizzle with maple syrup, and top with fresh raspberries. Enjoy!
