| 1 1/2 cups red wine vinegar, for the red wine vinaigrette | 5 spears peeled medium asparagus | |
| 1/4 cup lemon juice, for the red wine vinaigrette | 1 large egg, fried | |
| 2 tablespoons honey, for the red wine vinaigrette | 1 teaspoon minced chives | |
| 2 tablespoons salt, for the red wine vinaigrette | 1 pinch salt | |
| 1 tablespoon black pepper, for the red wine vinaigrette | 1 black pepper | |
| 3 cups blended oil, for the red wine vinaigrette |
Make the red wine vinaigrette: Combine all vinaigrette ingredients except the
Grill asparagus; let cool.
Plate asparagus and drizzle with 2 tablespoons vinaigrette. Top with a fried egg. Garnish with chives, salt and pepper.
