This smooth, creamy soup is truly cool as a cucumber. It's the perfect dish to offset the heat of a spicy meal or just to chill out on a steamy day.
|1 hothouse cucumber (not peeled), roughly chopped||1/2 teaspoon sugar|
|1 avocado, peeled, pitted and roughly chopped||juice of one lime|
|1/2 cup plain yogurt (not Greek-style)||ground pepper to taste|
|1/2 teaspoon salt|
Place all of the ingredients in a food processor and process until smooth. Taste for seasoning and add more salt, pepper or lime juice if desired.
Chill for at least four hours before serving.
