The single mom, 26, narrowed down her field of suitors from the original 25 to just two men in this eighth season of ABC's hit reality competition: race car driver Arie Luyendyk and businessman Jef Holm.
In the end, did Maynard, who broke off her engagement to former Bachelor Brad Womack last year, choose the sweetly earnest Holm or the hot and romantic Luyendyk?
Despite genuine feelings for both men, and her father's blessing to accept either man's proposal, Maynard chose Holm over Luyendyk and is now engaged to the kind entrepreneur.
After an afternoon date in the beautiful Caribbean country of Curacao made it clear to Maynard that she felt closer to Holm, the Bachelorette let Luyendyk down early, approaching him teary-eyed and upset.
"What's wrong?" Luyendyk asked.
"You know how I felt about you from our first date," Emily told a confused Arie. "I never thought I'd have to make a choice between you and anybody. I always thought it would be me and you. I'm sorry."
"I'm shocked," he said, obviously stunned at his rejection. "I completely thought we had something."
As Arie got up and began to walk away, Emily followed him. Eventually she let him go, since it was obvious he didn't want to stay any longer.
"Thank you for sparing me the embarrassment tomorrow," he told her during one final embrace. "Good luck."
Even during his car-ride away from Maynard, Arie confessed: "I still believe she is the love of my life. It's so painful. I can't believe this is it."
With that depressing dumping behind her, Maynard was free to accept Holm's proposal.
"I never in a million years thought I'd be so in love as I am," Emily said as she waited for Jef to arrive.
When Jef got there, Emily told him the long road to that moment "was all worth it" and sweetly explained that he was the only man "that got to meet Ricki and I didn't even go on a date with Arie yesterday. He's not even here today. It's just me and you."
"That's amazing. That's the best thing I've ever heard," Jef responded wrapping his arms around her.
"I feel like the luckiest man in the world," he said. "I think it's so rare that people find the person that they're meant to be with. I think it's so incredibly meant to be that you and I found each other like this here and I'm so grateful that we did. I think God puts the right people in our lives when the timing is just right."
After saying yes to his proposal, the newly engaged couple welcomed young Ricki into the courtyard where her stepfather-to-be popped the question. The three of them walked away hand-in-hand with Emily telling her daughter, "We did it!"
