Back to School 2004 - Breakfast at the Bus Stop

The first day of school should feel like a celebration -- and what better way to inspire that feeling than a party? Turn the first back-to-school morning into quality time for parents and kids alike with a special "Bus-Stop Breakfast." You don't have to arrange for tables, chairs or fancy treats. Easy handheld foods will make your kids and their friends feel special -- just the thing to settle any first-day-back jitters that might be arising.

Worried about your kids eating right, even on the go? "Easy" and "handheld" don't need to translate as "unhealthy" -- with a menu starring fresh fruit strung on skewers, low-fat mini muffins and drinkable yogurt, you'll be loading the kids up with nutrients, not empty calories.

If you're the Martha Stewart type, you can go ahead and arrange everything for the whole neighborhood -- only the mini apple muffins require any cooking. If you live in the same overbooked world as the rest of us, though, you'll call a few of the other parents in your neighborhood and assign breakfast duties. Volunteer to pick up the coffee yourself -- you'll be a hero to the adults as well as the kids.

To make:
Fresh-Fruit Kabobs (2 per child)
Apple Bran Muffins (1 per child)

To buy:
Drinkable yogurt (1 per child)
8-ounce bottles of water
For the parents: Box of coffee from Starbucks or Dunkin' Donuts

Disposable coffee cups
Plastic bag for trash
