These bite-sized goodies will be gone in seconds. Toast and crush up leftover stale bread if you don’t have any breadcrumbs on hand.
Shirley Fan
| Cooking spray | 1/4 teaspoon plus more kosher salt | |
| 1/2 cup whole wheat breadcrumbs | Pinch cayenne pepper | |
| 1/4 teaspoon dried thyme | 8 ounces boneless skinless chicken breasts | |
| 1/4 teaspoon garlic powder |
Preheat oven to 400°F. Line a baking sheet with aluminum foil or parchment paper, and lightly spray with cooking spray; set aside.
On a shallow plate, combine the breadcrumbs, thyme, garlic powder, ¼ teaspoon salt, and pepper; set aside.
Cut the chicken into bite-sized pieces. Toss the chicken in the breadcrumb mixture and lightly press the crumbs to the meat so that each piece is completely covered. Transfer the chicken pieces to the prepared baking sheet and lightly coat with cooking spray. Bake in the preheated oven for 12-15 minutes. Season with salt, to taste.
Serve with your favorite dipping sauce.
Note: There will be extra breadcrumbs leftover. Store in an airtight container.
