iVillage: What kind of food would you serve with Champagne?

Ted Allen: Not enough people recognize what a great food wine Champagne is. It goes with a lot of stuff. It's high in acid, which makes it very food-friendly. It cuts through the richness of a lot of food; it's cleansing and refreshing. Naturally the classic pairing would be caviar on creme fraiche with a blini or a little brioche. I remember once... [I received a bottle of Cristal] and we decided to pop it open with some spicy fried chicken from Popeye's. And it's a great combination, for a lot of the same reasons that it's good with a classic caviar canape. Fried chicken is salty, crispy and fatty and Champagne is a wonderful complement to that. It would go great with anything... I mean, bacon would be good with Champagne. Everybody this summer was grilling black mission figs wrapped in prosciutto. I think Champagne could be nice with that.
