Behind-the-Scenes Dish with Top Chef's Ted Allen

iVillage: What was your favorite dish of the show?

Ted Allen: Well, there's a dish that you haven't seen yet... Dale cooked a dish for the finale that had a sauce made from grapes that he halved and then cooked a little bit that was just transcendent. Absolutely lovely dish. And you know what's funny, is that one of the dishes that I remember the best was from way, way back, it was like episode 3, the first pork dish I saw Howie do. It was one of the only good dishes anybody cooked at that Elks Club challenge, where they were being asked to reinterpret comfort food classics. I think he reinterpreted pork and beans, but he did a very, very high level and beautifully, just gorgeously cooked dish. It was probably one of his best flavor combos, I think he really knew what he was doing with it. That's one that really sticks out in my mind.

In episode 7, the nightclub challenge... I praised this dish effusively: Tre did a shrimp wrapped in bacon on top of some cheese grits. Absolutely lovely.
