chime in now"There’s a great apple from Maine called the Black Oxford (pictured). It makes a beautiful sauce because the dark purple skin lends a bright rose color. Otherwise, good old McIntosh is always a good sauce apple -- just leave the skins on for maximum flavor, then run the cooked apples through a food mill. In England, the Bramley Seedling is the ultimate sauce apple."
