chime in now"I like a mix of sweet and tart apples for both pies and crisps. The best firm-tart options include the Northern Spy or the Calville Blanc d’Hiver, the traditional French apple for tarte tatin. For firm-sweet apples, I’d go with Jonagold (pictured) or Gravenstein."
