Extra virgin olive oil, the purest and most delicately flavored of all the types of olive oil, is not meant for cooking (though many people do use it for cooking, and it won't necessarily ruin your dish). It's meant to be tasted. Its aromatic qualities are best enjoyed drizzled over soups, dipped into by hunks of bread, or tossed in a vinaigrette. When you apply heat to extra virgin olive oil, you risk losing all of its best attributes.
