These snack bars are great for on-the-go nutrition. They’re full of flavor and easy to make. Delicious at room temperature, or heat up and serve with a glass of milk.
Cricket Azima
| 3 cups rolled oats | 2 eggs | |
| 3/4 cup brown sugar, loosely packed | 1 cup 2-percent or skim milk | |
| 2 tsp. baking powder | 1/4 tsp. almond extract | |
| 1/2 tsp. salt | 1/2 cup diced peaches | |
| 2 Tbsp. butter, melted | 1/4 cup fresh or frozen blueberries |
Pre-heat oven to 350° F.
In a medium mixing bowl, combine rolled oats, brown sugar, baking powder and salt and mix well.
In a small bowl, combine melted butter, eggs, milk, and almond extract.
Add wet ingredients to dry ingredients and mix until well blended.
Fold peaches and blueberries into mixture.
Pour mixture into a 9” x 13ʺ baking dish lined with parchment. Allow a few inches of parchment to extend over edges of the pan for easy removal of bars. Bake for 40 minutes, or until edges are golden brown.
Remove from oven and let cool for 5 to 10 minutes. Once cool, cut into squares and serve!
