This easy recipe uses ingredients you probably already have in your pantry. Mini cucumbers make pickles that are prefect for topping burgers, but full-size cukes work too.
|2/3 cup white distilled vinegar||1/2 teaspoon celery seed|
|2 teaspoons kosher salt||1 cup sliced mini cucumbers|
|1 cup sugar|
In a small saucepan over medium heat, combine the vinegar, salt and sugar. Cook, stirring until sugar is completely dissolved, about 5 minutes. Stir in celery seed.
Place cucumber slices in a lidded container such as a canning jar. Pour vinegar mixture over cucumbers and let rest uncovered until the liquid has cooled to lukewarm. Cover and refrigerate overnight.
