- 2 large French rolls, cut in half lengthwise
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter, melted
- 1 small bunch chives
- 1/4 cup pecorino cheese, grated
Preheat the broiler. Combine the olive oil and butter and brush onto the cut side of the rolls with a pastry brush. Place in the broiler until just toasted. Sprinkle the chives randomly and top with the cheese. Return to the broiler until lightly browned. Serve warm.
