Buffalo chicken wings rank up there with the country’s most popular bar snacks and we don’t have to tell you why. So, why not take those flavors and slather them over a pizza? Are you in? Of course you are.
|1 pound pizza dough||2 cups diced cooked chicken (rotisserie chicken is great, as is any leftover simply cooked chicken)|
|2 teaspoons olive oil, plus more to prepare the dough||1-2 tablespoons hot sauce, such as Frank Red Hot, according to taste|
|1 clove garlic, finely minced||1 cup crumbled blue cheese, such as Gorgonzola|
|4 cups baby spinach||1/2 cup cooked crumbled bacon|
|kosher salt and freshly ground pepper to taste|
Allow the pizza dough to rise at room temperature, and prepare it according to directions.
Meanwhile, in a medium sized skillet, heat the olive oil over medium heat. Add the garlic, and sauté for 1 minute. Add the spinach in handfuls, season with salt and pepper, and sauté for about 3 minutes until slightly wilted. Remove from the heat. In a medium sized bowl toss the chicken with the hot sauce.
Get the pizza dough ready to put on the grill, and cook it for the first few minutes according to directions, then flip it. At this point sprinkle over the chicken, the sautéed spinach and the blue cheese, bacon if you feel like it, and finish cooking according to directions.
Slice and serve.
