    1 cup sour cream 3 tablespoons chopped fresh chives plus additional chives for garnish
    1/4 cup buttermilk 1 teaspoon freshly ground black pepper
    2 tablespoons hot sauce (like Frank's Red Hot) 1 teaspoon kosher salt
    1/4 cup crumbled Maytag or other quality blue cheese

      Whisk the sour cream, buttermilk and hot sauce together until loose and creamy, then stir the blue cheese, chives, pepper and salt into the dip with a rubber spatula. Press the blue cheese against the sides of the bowl to crumble it further and meld it into the dip.

      Cover and refrigerate overnight to let the flavors meld. Sprinkle additional chives on for garnish before serving if desired.
