At a bar, a boilermaker is a shot of whiskey dropped into a glass of beer. This drink inspired these over-the-top Butterscotch Boilermakers, which are filled with a “shot” of butterscotch sauce. We started with store-bought chocolate cupcakes without icing, but you can use your favorite cupcake recipe here. (If your store only has the iced kind, scrape it off with a knife — this will be tastier!). It’s a treat the whole family will enjoy making and consuming together.
|12 chocolate cupcakes, without frosting||2 Tbsp. sugar|
|3/4 butterscotch sauce (such as the kind used to top ice cream)||1 tsp. vanilla|
|1 whipping cream|
Use a teaspoon to carve a scoop out of the top center of each cupcake, setting this cake “lid” aside. Scoop out and discard about a teaspoon of cake from the center of each cupcake.
Drop a tablespoon of butterscotch sauce into the hole in the center of each cupcake and replace the cake “lid” on top.
With a mixer, beat the whipping cream with the vanilla and sugar in a medium bowl until soft peaks form. Spoon a generous dollop of this boilermaker “foam” on top of each cupcake and serve at once.
