Can I Freeze Cheesecake?

I'm planning a bridal shower for my niece, and I am making cherry cheesecake cupcakes. Can I freeze cheesecake cupcakes? I won't put the cherry filling on until I'm ready to serve them. --iVillager ally4532

Cheesecakes freeze wonderfully. Just don't put the topping on until just before serving. Cheesecakes offer lots of versatility. Use miniature muffin tins with miniature paper liners and you have individual bite-size cheesecakes. Cupcake or muffin tins filled with cupcake liners give you larger individual cheesecakes. For a quickie method, buy graham cracker pie shells in foil pans and fill with your favorite cheesecake recipe, freeze, and pull out as needed. If making a cheesecake in a spring-form pan, remove the sides and freeze with the bottom. When the cheesecake is partially frozen, slide a knife between the cake and bottom, and the cheesecake will be more easily removed. Wrap well and freeze. When spreading with topping, try using different fruit toppings to add color to your assortment. Also, besides a basic cheesecake recipe, there are wonderful recipes for chocolate, praline or your favorite kind.
