HOW TO CHOOSE
Look for melon that:

  • Is firm like a well-inflated basketball, not hard like a boulder
  • Is heavier than it looks (indicating it's full of moisture)
  • Smells faintly sweet

Some self-styled authorities say you should also insist on even netting and no bald spots, but this is asking for too much and has no bearing on the taste.

HOW TO STORE
Refrigerate when ripe for up to three days. If you're only using part of the melon, it's best to slice up the rest and store the fruit in a Ziplock bag or tightly sealed container.

HOW TO PREPARE

  • Slice lengthwise into wedges, scrape away seeds with a spoon, then cut the fruit away from the peel
  • To enhance the flavor, toss with fresh lemon or lime juice
