These cookies smell fantastic as they bake.This distinctive spice shines in these cookies. These cookies require no further decoration than a dusting of sugar. Allow time for the dough to chill.
| 1 cup flour | 1/4 cup ground almonds | |
| 1/2 cup sugar | 6 tablespoons unsalted butter | |
| 1/2 teaspoon ground cardamom | 1 egg | |
| 1 teaspoon shredded lemon peel | 2 teaspoons milk |
In a large bowl, whisk together the flour, sugar and spices
Stir in the lemon peel and almonds
Cut the butter into the mixture with a pastry blender or two knives until the mixture resembles coarse crumbs
In a small bowl, beat the egg with the milk
Stir the egg and milk into the flour mixture until it forms a soft ba
Chill for at least four hours
Preheat the oven to 375 degrees
Roll the dough out one-eighth-inch thick
Cut into desired shapes and place on ungreased cookie sheets
Sprinkle with sugar and bake for five to eight minutes or until the edges are golden brown.
