Cat Cora: Pomegranate Glazed Cornish Game Hens

Cat says: I make these glazed Cornish game hens for special occasions. I love when the stuffing can include fresh Italian chestnuts that I roast myself over coals, but most of the year this isn’t practical. Luckily, most grocery stores carry jars of peeled and cooked chestnuts, which make this part of the recipe easy. (But if you do spot some fresh chestnuts and feel ambitious enough to roast them, the effort won’t be wasted if you use them with this recipe).
