Champagne Cocktail

The most elegant cocktail there is. Naturally, it's best made with topquality Champagne, but it also happens to be a good way to disguise the flaws of sparkling wines that are less than the best. Bitters—the most popular brand is Angostura—is a concentrated mixture of alcohol, herbs, and spices, which packs a powerful flavor; it can be omitted from many drinks, but is nearly essential here.

    1 small square sugar cube (the kind that measure about 1/2 x 1/2 inch, not the larger rectangular ones) 3 to 4 ounces chilled Champagne
    Tiny dash bitters
