Champagne vinegar is one of my all‐time favorite ingredients. The slight sweetness complements salads with a hit of fruity flavor that can't be beat.

    Ingredients

    1/4 cup champagne vinegar 1/2 teaspoon salt
    1 tablespoon Dijon mustard 1/4 teaspoon freshly ground black pepper
    1 tablespoon minced shallots 1/4 cup extra‐virgin olive oil
    1/2 teaspoon minced garlic

      In a small bowl or jar, combine the vinegar, mustard, shallots, garlic, salt and pepper. Whisk to blend thoroughly. Slowly whisk in the oil, continuing to whisk until mixture thickens. Or place all ingredients in a blender and process until thick and creamy. Store, tightly covered, in refrigerator for up to 1 week.
