Cheddar Eyeballs

These salty bites with a glaring olive “eyeball” in each make an excellent accompaniment to grown-up cocktails if your party swings more toward adults, but kids love the cheesy rich flavor, too—and they love to help shape them. The dough puffs and spreads when it bakes, so keep the eyeballs small when rolling them.

    Ingredients

    8 ounces extra sharp Cheddar, grated 1/2 teaspoon salt
    1/2 cup (1 stick) butter, cut into 6 pieces 1 cup flour
    1 teaspoon cumin 6-ounce bottle stuffed green olives, drained

      Preheat oven to 400 degrees Fahrenheit. In a food processor, combine the cheese, butter, cumin and salt and process until combined. With the machine running, add the flour and stop as soon as a ball of dough forms.

      Scoop up a tablespoon of the cheese mixture and mold it into a ball. Push an olive into it, with the stuffed end showing. Place on a baking sheet. Repeat with remaining dough and olives.

      Bake 12 to 15 minutes, until just golden brown. Serve warm.
