| 2 cups all-purpose flour | 3 strips cooked bacon, crumbled | |
| 1 teaspoon baking powder | 6-8 pieces chicken, or 1 whole chicken cut up | |
| 2 teaspoons salt | 1 teaspoon pepper | |
| 3 tablespoons shortening | 1 teaspoon poultry seasoning | |
| 3/4 cup milk |
Place chicken pieces in a large pot (6-quart or more).
Add 4 cups of water, 1 teaspoon salt, 1 teaspoon pepper, and 1 teaspoon poultry seasoning.
Cover the pot and cook over medium heat until the chicken is done and about to fall off the bone, about 45 minutes. Do not boil.
While the chicken is cooking, mix the flour, baking powder and salt in a bowl.
Stir in the shortening and then the milk. The dough should be easy to work.
Sprinkle the bacon bits into the mixture, a little at a time, and work them in.
Place your dough on a floured surface and knead it until it smooth and springy.
Then, either roll out the dough to a thickness of about ⅛-inch and cut it into pieces, or pinch off small pieces and shape them into 1-inch balls. If you are going to cut them into pieces, you can even make fancy shapes! These are your dumplings.
In another pot, make sure you have enough liquid to completely cover your dumplings.
Add chicken broth as needed.
Bring the liquid to a low boil and gently add the dumplings.
Cover the pot and cook for 15 minutes.
