|8 chicken thigh fillets, cubed||1 tablespoon mint leaves|
|1 large tin pineapple chunks, drained||1 tablespoon honey|
|1 red pepper, diced into 1-inch thick pieces||1 tablespoon oil|
|1 green pepper, diced into 1-inch thick pieces||1 tablespoon lemon juice|
Thread chicken, pineapple and peppers on skewers
Process left-over pineapple with rest of ingredients
Barbecue until chicken is cooked through, brushing with marinade
Serve with marinade as a sauce.
