The pineapple gives this chicken dish an exciting flavor. The marinade served as sauce on top of the kebabs is so tasty.
| 8 chicken thigh fillets, cubed | 1 tablespoon mint leaves | |
| 1 large tin pineapple chunks, drained | 1 tablespoon honey | |
| 1 red pepper, diced into 1-inch thick pieces | 1 tablespoon oil | |
| 1 green pepper, diced into 1-inch thick pieces | 1 tablespoon lemon juice |
Thread chicken, pineapple and peppers on skewers
Process left-over pineapple with rest of ingredients
Barbecue until chicken is cooked through, brushing with marinade
Serve with marinade as a sauce.
