    8 chicken thigh fillets, cubed 1 tablespoon mint leaves
    1 large tin pineapple chunks, drained 1 tablespoon honey
    1 red pepper, diced into 1-inch thick pieces 1 tablespoon oil
    1 green pepper, diced into 1-inch thick pieces 1 tablespoon lemon juice
