|3 to 4-pound hen or 1 fryer chicken||1 cup ice water|
|3 cups flour||1-2 teaspoons salt|
|1/2 cup melted margarine & 1 tablespoon margarine||1/4 teaspoon pepper, or to taste|
Boil hen or fryer until tender. Remove chicken pieces and remove meat from the bones. Set aside.
Bring the broth to a boil in a large saucepan or a Dutch oven.
Mix flour, margarine, egg, ice water, salt and pinch of yellow food coloring to make the dough. Add more flour to dough if needed.
Roll out dough on a floured board until thin; cut in small squares and add to boiling broth. Cook until dumplings are done, about 10 minutes. Add margarine, salt and pepper to taste. Add the reserved chicken meat and stir gently.
