This simple soup is on everyone’s favorite comfort food list. Some scientific evidence concludes that certain chicken soup recipes might actually help fight colds. Regardless, there is something about warm chicken noodle soup that seems to make you feel better when you’re under the weather; but don’t limit this quick soup to only when you or your kids are sick—it’s great anytime. Add more vegetables for extra nutrients if desired.

| 2 teaspoons olive oil | 1/4 teaspoon poultry seasoning | |
| 1 cup cooked, cubed chicken | 5 cups water | |
| 1/2 white onion, chopped | 3 chicken bouillon cubes | |
| 3 carrots, scrubbed and sliced | 1 cup cooked rice spaghetti, chilled | |
| 2 celery stalks, chopped | Salt and pepper |
In a medium pot, combine oil, chicken, onion, carrots, and celery. Cook for 2 minutes on medium-high heat. Add the poultry seasoning.
Add the water and bouillon cubes; stir until dissolved. Cook uncovered for 15 minutes over medium heat.
Chop the spaghetti into 2-inch (5-cm) pieces. Add to soup and stir for 3 minutes. Add salt and pepper to taste. Serve.
