    Ingredients

    3 tablespoons oil 8 ounces pineapple chunks, drained
    1 tablespoon orange juice 3/4 cup celery, diced
    1 tablespoon vinegar 3/4 cup seedless green grapes
    1/2 teaspoon salt 3/4 cup mayonnaise
    2 1/2 cups chicken cooked and cubed 1 cantaloupe, peeled, seeded and cut into 1/2-inch thick rings
    11-ounce can mandarin orange segments, drained

      Combine oil, orange juice, vinegar and salt

      Add chicken and stir to coat

      In a large bowl combine the remaining ingredients except cantaloupe

      Blend well and then add chicken mixture

      Cover and regrigerate until well chilled

      To serve place cantaloupe rings on lettuce lined serving plates and spoon salad onto each cantaloupe.
