These are great for appetizers and for lunch box food. The ginger adds a great flavor.
| 1 pound minced or ground chicken | 1 clove garlic | |
| 1/2 teaspoon curry powder | 2 slices fresh ginger, peeled and finely chopped | |
| 1/2 teaspoon dried coriander | 2 tablespoons smooth peanut butter | |
| 1 tablespoon salt-reduced soy sauce | 1 tablespoon honey | |
| 4 chopped spring onions (green onions) | 1 egg | |
| 2 tablespoons plain flour | 1 tablespoon chopped parsley, optional |
Mix all ingredients together
Lightly grease a pan and heat over medium-high heat
Place tablespoons of mixture into hot pan and flatten to make small patties
Turn over when brown to cook the other side.
