A traditional salad spiced up with cranberry sauce adds an unexpected sweet taste to this Recipe of the Week winner.
| 2 cups cooked chicken, diced | 2 tablespoons cider vinegar | |
| 2 medium red delicious apples, unpeeled and diced | 1/2 cup dark seedless raisins or dried cranberries | |
| 2 celery stalks thinly sliced | Shredded lettuce | |
| 1/2 cup chopped pecans or walnuts | 1 can cranberry sauce | |
| 1/2 cup mayonnaise (adjust to personal preference) | 6 apple cinnamon or raisin cinnamon bagels, toasted |
In a medium bowl combine mayonnaise with vinegar until smooth
Add apples, celery, nuts and raisins or dried cranberries
Toss we
Add chicken and toss to coat we
Place 1 scoop of chicken mixture on 1 side of bagel top with shredded lettuce
On other half of bagel, spread with 1 spoonful of cranberry sauce
Place on top of sandwich
Slice sandwich in half and serve.
