|1/2 cup unsalted butter, softened (1 stick)||4-6 tablespoons heavy cream|
|1 package confectioner's sugar (1 pound)||1 1/2 teaspoons vanilla extract (or lemon)|
In the bowl of a mixer, beat the butter and sugar with 3 tablespoons cream and vanilla on medium-low speed until smooth. Beat in additional cream as needed for desired thickness. Beat on high for an additional 2 minutes.
For fancier cupcakes, use a plain tip and pipe a "snowman"-style stack on top of the cupcakes (see photo). Garnish with a raspberry or colored sugars.
