    • 1

Preheat the oven to 335°F and place the rack in the middle position. Grease two 9-by-2-inch round pans and line the bottoms with parchment.

    • 2

Combine the dry ingredients and the wet ingredients in separate bowls. Set aside.

    • 3

Place the butter and sugar in the bowl of a standing mixer fitted with the paddle attachment. Process on low speed for 3 to 4 minutes.

    • 4

Add the eggs to the creamed butter one at a time. Let the first one incorporate before adding the second.

    • 5

Alternately add the dry and wet ingredients about a quarter at a time without pausing between additions.

    • 6

Divide the batter into the prepared pans and bake for about 30 minutes, or until the edges come away from the pan and a wooden skewer inserted in the center comes out with a few crumbs.

    • 7

Cool the cakes until the pans are cool enough to handle, then invert them onto plates. Gently use an offset spatula to release the cake, if necessary.

    • 8

Allow the cakes to cool completely before assembling with Old-Fashioned Chocolate Buttercream or Smith Island Cake Icing. If desired, finish the cake by adding chocolate curls on top and mini marshmallows along the sides.
