Brine:
A solution of salt, sugar and liquid, plus aromatics that can be used to preserve foods (as with pickles), or infuse them with moisture (as with a turkey). Don't stop at turkey when brining. Meats, such as pork chops or chicken breasts that dry out quickly when cooked, also benefit from brining. Hint: Play around with your brining liquids. Anything from apple cider to tea make interesting choices. << Return to Cooking Dictionary Cheat Sheet
