Cooking Dictionary: Frittata

Frittata:
An Italian egg dish, where all the ingredients are mixed together before being poured into the pan (contrast this with an omelette where the fillings are folded into the middle). The frittata is cooked slowly over low heat and can be flipped or run under the broiler to cook the top. Frittatas are a great way to use up leftover pasta. Just blend it with eggs, cheese, herbs or anything else you like.
