Crispy Prosciutto Wrapped Cheddar with 2 Sauces

    1 shallot, diced 2 cups all-purpose flour
    1 Granny Smith apple, diced 1 teaspoon black pepper
    1 clove of garlic, diced teaspoon cayenne pepper
    3 tablespoons unsalted butter 1/4 teaspoon onion powder
    1 ounce of your favorite Bourbon teaspoon garlic powder
    1 bottle of your favorite BBQ sauce 2 whole eggs
    1 avocado, smashed 1 cup buttermilk
    Juice of 1 lemon 1 beer (your favorite)
    Kosher salt to taste 1 pound smoked or aged cheddar
    jalapeo, deseeded and diced 4 slices prosciutto - sliced thin and cut in half
    2 tablespoons sour cream 1 quart vegetable oil

      In medium sauce pot, add butter and allow to melt. Add garlic, shallots, and apples and mix to combine.

      Remove pan from flame and pour in bourbon (CAUTION: be careful of flame up when adding the bourbon). Place pot back onto flame and allow alcohol to cook off, then stir in your favorite BBQ sauce and allow to boil once.

      Combine the avocado, lemon juice, kosher salt, jalapeno and sour cream in blender or food processor and mix until smooth.

      Combine the flour, 2 teaspoons kosher salt, black pepper, cayenne pepper, onion powder and garlic powder in a shallow bowl.

      Combine the eggs and buttermilk in a separate shallow bowl. Stir in the 1/2 the beer.

      Slice the cheese into 8 pieces and wrap the prosciutto around each piece.

       Place oil in a large pot and begin to heat.

      Dip wrapped cheese in buttermilk mixture, then flour mixture. Repeat.

      Carefully place breaded cheese into oil. Allow to fry until golden brown. Serve with your sauces and enjoy!!!
