|1 cup chopped cooked chicken||2 tablespoons dried sweetened cranberries|
|1/4 cup mayonnaise||kosher salt and pepper|
|1 teaspoon curry powder||6 slices pumpernickle bread|
|2 tablespoons chopped scallions|
In medium bowl, combine chicken, cranberries, scallions, mayonnaise, and curry powder. Season with salt and pepper to taste.
Spread chicken mixture onto three bread slices. Top with remaining bread. Slice off crusts. Cut remaining sandwich into four triangles.
Note: Curry powder is a blend of spices and can widely vary. Try a variety of store-bought powders or make your own.
